As a Master Chocolatier, Graham Sutherland knows how to make mouth-watering truffles, finished and garnished to an exacting standard of creativity. During  this class, Chef will pass on his knowledge and experience during this truffle making class.

During this 3 hour class, Chef Graham will teach you how to make a selection of handmade truffles, expertly showing everyone all the different methods and recipes on how to make the perfect, hand-rolled chocolate truffle, using different flavours and textures.

Chef will teach everyone about the different chocolate tempering methods (table top tempering, direct warming, tempering machine and seeding.

All our classes at The Pastry Academy involve everyone making and creating their own handmade chocolate truffles.

The class will finish off their truffles with a coating of chocolate, some will be hand-rolled and others will use chocolate dipping utensils to created different finishes.The end result will be that everyone will have made their own creatively designed truffle.

After the class, each person will receive a box of assorted handmade truffles, from each participant.

  • How to temper chocolate perfectly every time using the seeding method
