Chef has designed and created this class as the next follow on class to An Introduction to Classic French Macarons. As this second class is more enhanced in skills and techniques, it is open to everyone who has completed our first Introduction to Classic Macarons class.

Italian Macaron Mastery: Intermediate

This class is designed for experienced macaron enthusiasts looking to elevate their skills with the classic Italian method—a more advanced technique than the traditional French approach. You'll master the hot mix macaron recipe, where the mixture is heated to 121 degrees (soft ball stage), resulting in a unique texture and flavour.

In this advanced session, participants will learn how to incorporate seasonal produce into their macaron flavourings and explore sophisticated presentation techniques. Chef will guide you through the process of tempering chocolate to create elegant bases and garnishes for your macarons. You'll also learn how to craft a variety of flavoured creams and gels, which you can take home to recreate these luxurious treats.
